Make 2 cups of cooked quinoa according to the instructions on the box.
1/2-3/4 cup of red pepper diced into 1/4″ squares.
5 green onions, finedly minced
2 cloves of garlic, finely minced
1 can of black beans, thoroughly drained
1/4 – 1/2 c. cilantro (I love the stuff, so I lean toward the 1/2 cup side)
1/2 cup of oil and vinegar type dressing
Mix all the ingredients together.
Change it up: Swap out fresh dill for the cilantro. Add a dash or two of sea salt.
